Excellent choice for serving in thin slices, paired with lots of fresh veggies. The skirt steak is a long, flat cut from the plate of the beef. Typically they are sold rolled up in the package. Skirt steak has a coarse, open texture that works great with marinades as it will absorb a lot of flavor. Skirt steak is best cooked quickly and sliced very thin. Traditionally used for fajitas, it is also a great choice for when you want to garnish a salad with some flavor-packed beef.
