Sheep meat (mutton or any sheep over 1 year old when processed) has a bad reputation but we've found it is mostly undeserved. Good mutton, well raised can be delicious! It is like extra-robust lamb or buttery, fatty beef and well worth a try. If you love lamb, you'll probably enjoy our mutton as well. These cuts can come with a fair amount of fat. Trim and save the fat to make tallow, or cook it and save for later use when cooking veggies, etc.
